This Braunschweiger is more firm and coarsely ground than the product typically found in stores. I am admittedly not a fan, but my aunt and uncle are and they say it's the best they've ever had. While they may be biased, we're a Scandinavian family not given to false praise, so I believe them.
Our pigs spend their lives on pasture, moving to fresh grass frequently. They dig up roots, roll in the mud, run through the field, and live happy lives. Their activity level, lack of stress, and excellent diet produce pork with outstanding flavor.
